Eel Grass
- rhizomes are lightly coloured, extensive and edible raw.
- rhizomes can be dried for storage.
- stems and leaf bases are edible raw.
- stems have a sweet, crisp taste.
- leaves may have attached herring spawn, which is also edible.
- look for eel grass in wave-protected areas, rooted in muddy/sandy areas.
- edible look-alikes are Surf-grass (Phyllospadix scouleri) and Sea-grass (Phyllospadix torreyi).
